Egg capacity is given as number of eggs for a gel sponge batter, not litres. CPM 12 runs on 220 V single phase; every other model is 415 V three phase, at 50 or 60 Hz.
What comes with the machine.

Wire whip
Eggs, cream, meringue and icing, at 25–99% speed. Fitted as standard on every CPM.

Flat beater
Cookie dough, cake batter, and creaming butter and sugar, at 25–70% speed. Fitted as standard on every CPM.

Kneading hook
Bread dough at 60% hydration, at 25–40% speed. Fitted as standard, though a spiral mixer is the better tool if bread is your main product.

Mixing bowl
Single piece deep drawn stainless steel. No seam to crack and no crevice to trap dough or batter.

Bowl trolley
Above 40 litres the bowl moves on its own wheeled trolley rather than being lifted by hand. Supplied with the machine from CPM 40 upward.

Scraper
Runs against the bowl wall at 25–75% speed, so the mix stays even without stopping the machine to scrape by hand.
Three choices to make at order.
None of these is an upgrade path you can add later — all three are set when the machine is built.

Tall Boy
A planetary will knead with the hook fitted, but if bread is your main product a spiral mixer develops the gluten faster and holds the dough temperature better.
