VCS Sheeter.
A reversible dough sheeter where each millimetre matters. Belt tables on both sides, a guarded roller assembly and a graduated scale that gives you the same thickness on Monday as it did last Thursday — in two belt widths, VCS 490 and VCS 590.

How it works
Dough passes back and forth between two rollers while you step the gap down. Each pass thins the sheet a little further, so the gluten relaxes instead of tearing — which is the whole difference between a laminated dough that lifts and one that does not.

01 VCS 590
The wider belt, for larger production sheets. The one to pick by default unless your bench says otherwise.
02 VCS 490
The same machine on a narrower belt, for benches where the 590 will not fit. Same roller scale, same guarding, same controls.
Call or email with your bench length and sheet size and we will confirm which width fits and send the current specification sheet.

The puff line.
Mixing → Sheeting → Forming → Baking. The sheeter is the machine that makes the difference between a khari that shatters and one that is merely bread.
